What kind of Camera Lens would I need to...?

...take professional quality pictures of people, animals, and scenery. I want to be able to manually focus on my subject and have the background "blured out". I was thinking of a Canon Rebel XTi with a 18-55mm and a 55-200mm lens. Or would just the 18-55 cover it? Or my other choice was a Casio Exilim Pro EX-F1. Which would be better? Thanks.
For the kinds of pictures I want to take would the 18-55mm lens cover it? Or would it be best if I got an additional lens. (If any pro's can help me out with some choices feel free to msg me on YIM - Vilandra485) Thanks!

It has to do with the depth of field. http://en.wikipedia.org/wiki/Depth_of_field

And the setting of the lens' aperture.

Below - the 2nd one from the left (red tie)-- Canon 100-400 mm f 4.5-5.6 at 250 mm. The one with the baby is Canon 24-70 mm f 2.8 at 70 mm

So any lens really--and you have to zoom in and set the aperture to its widest to keep the depth of field shallow. (The Kit Lens may not work so well in this case because its aperture is smaller at the longer setting). The 55-200 mm zoom's aperture at 200 is f 5.6, so you should get a bit of background blurr.

You have better control of the camera settings with a DSLR.
